BLUEBERRY LEMON MUFFINS

Ingredients: 

​

  • 2 cups almond flour

  • 1/2 tsp baking soda

  • pinch of sea salt 

  • zest of one lemon

  • 3 eggs

  • 1/4 cup mashed banana

  • 1/4 cup raw honey 

  • 1 tsp vanilla extract

  • 2-3 tbsp fresh squeezed lemon juice

  • 1 cup fresh blueberries

Directions: 

  1. Preheat oven to 325 degrees and grease muffin tin.

  2. In a medium bowl, combine almond flour, baking soda, salt and lemon zest. In a separate bowl, combine the eggs, banana, honey, vanilla extract and lemon juice. 

  3. Add the dry ingredients to the wet ingredients and mix until well combined. 

  4. Fold in blueberries.

  5. Spoon into a lightly oiled muffin tin and press down.

  6. Place in the oven and bake for approximately 15 minutes until the dough is no longer soft or toothpick comes out clean.
