
BLUEBERRY LEMON MUFFINS

Ingredients:

2 cups almond flour
-
1/2 tsp baking soda
-
pinch of sea salt
-
zest of one lemon
-
3 eggs
-
1/4 cup mashed banana
-
1/4 cup raw honey
-
1 tsp vanilla extract
-
2-3 tbsp fresh squeezed lemon juice

1 cup fresh blueberries

Directions:

Preheat oven to 325 degrees and grease muffin tin.

In a medium bowl, combine almond flour, baking soda, salt and lemon zest. In a separate bowl, combine the eggs, banana, honey, vanilla extract and lemon juice.

Add the dry ingredients to the wet ingredients and mix until well combined.

Fold in blueberries.

Spoon into a lightly oiled muffin tin and press down.

Place in the oven and bake for approximately 15 minutes until the dough is no longer soft or toothpick comes out clean.
